Green's sweet pickled cottage rolls are made from a boneless shoulder butt that is wet cured in a sweet brine. The cottage rolls soak in our house made brine for at least 36 hrs before being vacuum sealed to optimize freshness and allow them to continue absorbing the juicy and flavourful brine!
Sweet pickled cottage rolls are very versatile and can be paired with endless side dishes but are especially tasty when served alongside sauerkraut or scalloped potatoes.
Our butchers hand tie each cottage roll to be approx. 2.5lbs. Please specify in your order notes if you need an alternate size. Keep in mind with the time it takes to roll and brine each roast your pickup date may need to be adjusted for a custom order!
