The Cross Rib is a savoury cut of beef from the front shoulder area. While Cross Rib steaks offer the same deep, beefy flavour as a Ribeye, they are much leaner and can be tough when overcooked. Cross Rib steaks are best when marinaded, pan-seared to medium rare, or cooked low & slow.
Green's Cross Rib steaks are cut 1" thick and typically weigh half a pound. Please specify in your order notes if you would prefer a different size or thickness.
