Green's beef short ribs, also known as braising ribs, come from the rib plate on a beef - just below the prime rib. Short ribs are known for their thick layer of meat on top of a short, flat bone. Short ribs are incredibly flavourful and tender but we recommend cooking them low and slow.
Butchers Tip: for the ultimate tender beef short ribs we recommend browning your ribs in a dutch oven, followed up by a simmer in some red wine or broth, and finishing with a low and slow braise in the oven.
